So, what happens to all those beautiful grapes?
Okay, heads up - we’re about to get a little technical. But don’t worry, we’re not going to tell you everything — that would take forever. If you’re curious, just ask Niels — he loves explaining.
In the meantime, here are the five most important things to know about how we make our wine…
We don’t put all our grapes in one basket:
Some vineyard plots are specially selected for our top wines, and of course, each grape variety is sorted separately for our single-varietal wines.
We protect the harvested grapes from the vine to the vat:
The grapes are picked when slightly overripe to obtain rich, concentrated wines that are ready to drink early because the tannins are already smooth. That’s why it’s super important to avoid oxidation after picking. That's why we harvest at dawn, when it's still cool, and the grapes go straight into a press operated in an oxygen-free environment to lock in the freshness and preserve all those delicate aromas.
We watch over fermentation like milk on the stove:
Since fermentation starts gently and naturally - thanks to the unstressed grapes - we can extend the maceration to extract every last drop of their hidden treasures.
Every day, we check the temperatures, monitor the progress and taste from each vat, one by one.
We’re big fans of precision work:
Each vat contains a single grape variety and a specific plot (or plots), opening up endless possibilities for expressing the essence, diversity and identity of the Ventoux terroir and grapes.
We wait for the right moment:
During the ageing process (in barrels or vats, depending on the wine), we regularly taste each cuvée, patiently waiting for the moment when we know it's ready to leave the domaine and be enjoyed by wine lovers everywhere.


Complicated?
Well, yes - good wine doesn't happen by accident! And to be honest, we'd probably be bored without a little complexity. You have to master that complexity to create wines that are simply easy to love.

The Domaine's wines offer a range of different drinking experiences, but they all have one thing in common: they are wines made for drinking, with subtlety, balance and a delicious character. Our wines are ready to drink (you can’t hold down a good thirst!), but some can also age beautifully for years (the wait is hard, but trust us, it’s worth it). At MUR•MUR•IUM, we love wines with real character. Red, white or rosé, we strive for maturity and freshness, with body, harmony and liveliness.
